How to Prepare

  1. Cook the sweet potatoes. Wash them and place in an electric pressure cooker. Do not peel; cover completely with water and cook on high pressure for 15 minutes. Remove and let cool.

  5. In a mixing bowl (or the bowl of a stand mixer), combine the cooked beef, rice, mashed sweet potatoes, and vegetables. Mix well.
  6. Portion into storage containers. Refrigerate for up to 3–4 days or freeze for up to 3 months.
